Whether your holiday cookie jar needs filling or a time-out from the shop-wrap-repeat ritual is long overdue, these clean-eating treats are a treasure this time of year. A little chocolate never hurts, but it’s actually good for you when it’s dark. This recipe doubles the benefits with rich cacao powder and chunks of 70% dark chocolate spun together with velvety, smooth almond butter. Santa (and your health coach) will approve!
 
Double Chocolate-Almond Butter Cookies
Ingredients
1 cup smooth almond butter, stirred well
 1 large egg
 3 Tbsp. raw cacao powder 
 3 tsp. stevia extract
 1/4 tsp. baking soda
 1/4 tsp. sea salt
 3 oz. dark chocolate (70% or higher), broken into small piece
Directions
- Preheat oven to 350 degrees F.
 - In a medium-sized bowl, stir together first six ingredients until blended. Stir in chocolate pieces.
 - Drop dough by rounded tablespoons onto sprayed baking sheets.
 - Bake for 10 to 12 minutes or until lightly brown. Let cool on baking sheet for five minutes, then remove to a wire rack and let cool for 15 additional minutes.
