An excellent source of magnesium, B vitamins, vitamin C, calcium, fiber and iron, red-flesh dragon fruit (AKA pitaya) is a wonderful addition to your morning meal! This exotic fruit is also rich in antioxidants and contains many phytonutrients. Blend with your favorite dairy-free yogurt (like coconut!) and sprinkle with superfoods – we added hemp seeds and raw pistachios here.

Dairy-Free Pitaya Parfait

Ingredients

Instructions

  1. Peel pitaya and cut in half.
  2. In food processor or blender, combine maple syrup, yogurt and half the pitaya until smooth. Refrigerate for 15 minutes
  3. Use melon baller or small spoon to scoop the other pitaya half into balls. Set aside.
  4. Spoon yogurt blend into serving cups, top with pitaya balls, crushed pistachios and hemp seeds. Top with a touch of maple syrup, if desired.
