Gluten-Free Matcha-Pistachio Muffins

  • 1 cup gluten-free all-purpose baking flour
  • ½ tsp. pink salt
  • 1 tsp. baking powder
  • 1 Tbsp. matcha green tea powder
  • 2 Tbsp. egg replacer (plus ¼ cup water)
  • ½ cup unsweetened applesauce
  • ¼ cup coconut oil
  • ½ cup maple syrup
  • Shelled pistachios
  1. Preheat oven to 350 degrees F.
  2. In medium bowl, mix together flour, salt, baking powder and matcha powder.
  3. Add remaining ingredients (except pistachios) and stir until well combined.
  4. Into lined muffin tin, pour ? cup batter for each well. Top with pistachios.
  5. Bake 20 minutes.
