Dairy-Free Pitaya Parfait
An excellent source of magnesium, B vitamins, vitamin C, calcium, fiber and iron, red-flesh dragon fruit (AKA pitaya) is a wonderful addition to your morning meal! This exotic fruit is also rich in antioxidants and contains many phytonutrients. Blend with your favorite dairy-free yogurt (like coconut!) and sprinkle with superfoods – we added hemp seeds and raw pistachios here.
Dairy-Free Pitaya Parfait
- 2 cups dairy-free vanilla yogurt
- 1 red-flesh pitaya
- 1 Tbsp. maple syrup (or honey)
- 2 Tbsp. crushed raw unsalted pistachios
- ½ Tbsp. hemp seeds
- Peel pitaya and cut in half.
- In food processor or blender, combine maple syrup, yogurt and half the pitaya until smooth. Refrigerate for 15 minutes
- Use melon baller or small spoon to scoop the other pitaya half into balls. Set aside.
- Spoon yogurt blend into serving cups, top with pitaya balls, crushed pistachios and hemp seeds. Top with a touch of maple syrup, if desired.
