Easy High-Protein French Toast

It’d be a shame to waste a half-eaten loaf of bread, just because it had become a little stale. That’s, of course, the best excuse for splurging on a stack of French toast come Saturday morning, after a week’s worth of sandwiches didn’t quite empty the bag. Rather than soaking those slightly stiff slices in a shallow pan of a traditional egg-and-milk mixture, stir in some flavored protein powder and cinnamon for an extra-nutritious and delicious breakfast treat! You might even find yourself switching to salads for lunch so more of the next loaf can go toward repeating this recipe next weekend.

Easy High-Protein French Toast

Ingredients

2 slices sprouted wheat bread
1/4 cup egg whites
1/2 scoop chocolate-peanut butter whey protein powder
1 Tbsp. unsweetened vanilla almond-coconut milk
1 tsp. cinnamon
Optional: maple syrup
Coconut oil spray

Directions

  1. In large bowl, mix together egg whites, protein, almond-coconut milk and cinnamon until smooth. Pour mixture onto a plate or into a shallow bowl.
  2. Place bread in egg mixture and let soak for about a minute; flip bread and repeat for other side.
  3. Spray frying pan with coconut oil and warm over medium heat.
  4. Place soaked bread in pan, then pour remaining egg mixture over top.
  5. Cook French toast on both sides until golden brown.
  6. Top with maple syrup and fresh fruit.
