Red Pepper & Ham Egg Muffins

Need a healthy breakfast in a jiffy? Don’t think pouring a bowl of cereal or throwing a protein bar in your bag is your only option for fast and easy – make these egg muffins ahead of time and grab one on your way out the door. To prep, you only need a handful of ingredients (Canadian bacon, anyone?) and less than 20 minutes. Easy, breezy!

Makes 8 egg muffins (2 per serving)

Ingredients

6 eggs
3/4 cup diced baby sweet red bell peppers
3/4 cup diced Canadian bacon or ham
1/8 tsp. paprika
1/4 tsp. each salt and black pepper
Grapeseed oil to spray muffin pan or muffin cups
Chives for garnish

Directions

  1. Preheat oven to 400 degrees F. Spray 8 muffins cups with grapeseed oil or line with cups.
  2. In medium bowl, whisk together eggs, peppers, Canadian bacon and spices. Transfer to prepared muffin cups.
  3. Bake 15 minutes until eggs are cooked through. (They will be puffed up at first then settle down while cooling.)
  4. To serve, garnish with freshly chopped chives.
