Elegant Cabbage Salad with Homemade Dressing

Salad can get super boring with the same old lettuce, tomato and cucumber. Thankfully, there are many ways to get creative, mix things up and work in more colors! One way to accomplish a new flavor as well as a beautiful presentation is to swap your usual greens with red cabbage. Get even fancier by making your own honey-orange dressing — it’s so easy! Your love for salad will be totally renewed when you try out this unique recipe.

Ingredients

Salad

1/2 purple cabbage, thinly sliced
2/3 cup bean sprouts
1/4 cup fresh basil, chiffonade-style cut

Dressing

1/3 cup freshly squeezed orange juice
1/4 cup olive oil
1 Tbsp. dijon mustard
1 tsp. raw honey
Pinch of salt and pepper

Directions

  1. Remove leaves from cabbage, discarding anything that is damaged or wilted. Wash and thinly slice cabbage.
  2. In large bowl, combine cabbage, bean sprouts and basil.
  3. In small bowl, whisk together all dressing ingredients and pour over salad.
  4. Toss salad and let sit for several minutes to let flavors meld. Serve chilled.
