Got the dinner blues? Jazz up an ordinary weeknight with a quick-to-make jambalaya, which is chock-full of plump shrimp and spicy sausage. You’ll have everyone at the table tapping their feet and singing your praises. Little do they know, this recipe practically cooks itself.
Fast & Fiery Jambalaya
Ingredients
1 yellow onion, chopped
1 red pepper, chopped
1 green pepper,chopped
1 lb.pre-cooked, peeled shrimp
1 lb.hot Italian sausage or turkey sausage
2 cups white rice
2 cups chicken broth
6 oz. tomato paste
2 tsp. sea salt
1 tsp. black pepper
2 bay leaves
1 tsp. cayenne pepper
2 tsp. red pepper flakes
Directions
- In a large frying pan, simmer the rice and chicken broth.
- Chop the onions and peppers, add to the pan and simmer until rice is cooked.
- Add the remaining ingredients to the pan, cover and cook on medium heat until shrimp and sausage are fully cooked, about 20 minutes.
Spoon into a large bowl and dig in!
