Ho, ho, how easy it is to make cupcakes when you have a little help! Santa surely doesn’t work alone, so why should you? Bring out the mini cupcake maker to whip up these peppermint brownie cupcakes in under 10 minutes. The extra help will save you oven space and give you time to make a cream cheese peppermint frosting. Merry bake-fast and Happy New Year!
Cupcakes
1-1/2 cups almond flour
1/3 cup cocoa powder
1/4 cup olive oil
1/4 cup honey
1 tsp. baking powder
1/2 tsp. peppermint extract
1/4 cup almond milk
2 eggs
Frosting
8 oz. cream cheese
1 cup powdered sugar
2 Tbsp. almond milk
Candy canes, crushed
Santa candy toppers (optional)
Directions
- In a large bowl, add all cupcake ingredients and stir until smooth and well combined.
- Pour batter into the Brentwood Mini Cupcake Maker and wait 6-8 minutes for batter to rise and bake completely.
- While cupcakes are baking, prepare frosting: In a small bowl, add cream cheese, powdered sugar and almond milk. Use a hand mixer to blend until smooth.
- Once cupcakes are done, carefully remove them from the cupcake maker and place on a cooling rack for 5-10 minutes.
- Frost each cupcake, top with crushed candy canes and a Santa candy (if using).
