Bring out the mini cupcake maker to whip up these peppermint brownie cupcakes in under 10 minutes. Cupcakes

1-1/2 cups almond flour
1/3 cup cocoa powder
1/4 cup olive oil
1/4 cup honey
1 tsp. baking powder
1/2 tsp. peppermint extract
1/4 cup almond milk
2 eggs

Frosting

8 oz. cream cheese
1 cup powdered sugar
2 Tbsp. almond milk
Candy canes, crushed
Santa candy toppers (optional)

Directions

  1. In a large bowl, add all cupcake ingredients and stir until smooth and well combined.
  2. Pour batter into the Brentwood Mini Cupcake Maker and wait 6-8 minutes for batter to rise and bake completely.
  3. While cupcakes are baking, prepare frosting: In a small bowl, add cream cheese, powdered sugar and almond milk. Use a hand mixer to blend until smooth.
  4. Once cupcakes are done, carefully remove them from the cupcake maker and place on a cooling rack for 5-10 minutes.
  5. Frost each cupcake, top with crushed candy canes and a Santa candy (if using).
