Gluten-Free Bacon-Maple Waffles

You could serve waffles. You could serve bacon. But for a truly special breakfast, surprise your family with a dish featuring both of their favorites, all in one. These homemade waffles start with a simple gluten-free mix, but you’ll add healthy ingredients to make them dairy-free (a flax “egg” and applesauce) and the perfect tender-crisp texture (coconut oil to the rescue!). Oh, and did somebody say… bacon?

For a vegan-friendly option, make these crispy facon bacon bits instead!

Makes 4 waffles

Ingredients

1 cup gluten-free pancake and waffle mix
1 Tbsp. ground flax mixed with 3 Tbsp. water
1 cup unsweetened hemp milk
¼ cup organic applesauce (optional, if you prefer a more moist waffle)
2 Tbsp. organic maple syrup + plus more to top waffles
1 Tbsp. coconut oil
3 strips of cooked bacon (pasture-raised if possible), cooled and roughly chopped
Cooking spray

Directions

1. Cook bacon and set aside to cool.
2. Heat waffle maker to medium-high heat.
3. In large bowl, combine all ingredients and mix well.
4. Coat waffle maker with cooking spray to prevent sticking.
5. Pour batter into waffle maker (standard size that makes 4 small waffles at a time).
6. Carefully, close waffle maker lid and allow waffles to cook for 6-8 minutes until cooked completely. (Note: Cook longer for a crispier waffle.)
7. Transfer waffles to a plate and serve with maple syrup.
