Gluten-Free Beef & Bacon Meatballs

Bacon: it’s not just for breakfast. But you already knew that. In fact, this magnificent meat makes its way onto many of your burgers and sandwiches, sits crumbled atop your salads and can be found tucked into your finest quiches and casseroles. How about inviting it to your next spaghetti dinner? Combined with beef and bulked up with gluten-free breadcrumbs, these bite-sized balls are the topping your favorite pasta dish has been missing. Can’t wait for noodles to cook? Poke in some toothpicks and – we dare you – try not to fill up on the appetizers!

Gluten-Free Bacon Meatballs Recipe

Gluten-Free Beef & Bacon Meatballs

Ingredients

1-1/2 lbs. ground beef
1 pkg. bacon
1 onion, sliced
1 egg
1/2 cup gluten-free breadcrumbs
3 Tbsp. dried parsley
1 Tbsp. Worcestershire sauce
3 tsp. minced garlic
Optional: 2 tsp. sea salt, or to taste

Directions

  1. In food processor, combine onion and bacon; process until finely chopped.
  2. In large bowl, combine all ingredients and mix well.
  3. Use hands to shape meatballs, approximately 1-1/2 inches in diameter.
  4. In frying pan, arrange meatballs and cook until done. (Note: Remember, this recipe includes pork, so you don’t want any pink color to remain.)
  5. Serve meatballs with toothpicks as an appetizer or over spaghetti squash pasta with sauce of choice.
