Gluten-Free Tigernut French Toast

Ingredients

2 slices organic, gluten-free bread
1 egg
1/2 cup tigernut flour
1 Tbsp. coconut oil
1 Tbsp. coconut sugar
Maple syrup



Directions

  1. In medium-sized frying pan over medium heat, melt coconut oil.
  2. In small bowl, whisk egg. Dip bread slices into egg, then flour, until well coated.
  3. Cook slices several minutes on each side, until golden.
  4. Serve French toast sprinkled with coconut sugar and drizzled with maple syrup. Enjoy!
