What you get instead is wholesome gluten-free flour, a vegan egg substitute and natural maple syrup for sweetener. Not a tea drinker? Not to worry! Ingredients
1 cup Vitacost Gluten-Free Multi-Blend Flour
1/2 tsp. pink salt
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1 Neat Egg Vegan Egg Substitute
1 tsp. vanilla extract
1/4 cup coconut oil
1/2 cup maple syrup
2 cup peaches (about 3 medium), pitted and diced
Directions
- Preheat oven to 375 degrees F. Line muffin tin with paper liners.
- In a large bowl, combine flour, salt, baking soda and cinnamon.
- In a small bowl, prepare Neat Egg.
- In a medium bowl, combine vanilla, coconut oil and maple syrup.
- Add wet ingredients and egg into dry ingredients and mix until combined.
- Gently fold in diced peaches.
- Pour about 2 tablespoons of batter into each muffin cup.
- Bake 20-25 minutes.
