Gluten-Free & Vegan Peach Muffins

Your cup of tea needs a partner. Whether you prefer a steaming mug of herbal tea or you’re a classic Early Grey drinker, your cup of comfort will pair perfectly with a peach muffin. These gluten-free, vegan treats are made with good-for-you ingredients, which means, of course, you won’t find standard muffin add-ins like white flour, eggs or sugar. What you get instead is wholesome gluten-free flour, a vegan egg substitute and natural maple syrup for sweetener. Not a tea drinker? Not to worry! These delightful mini cakes also team up well with a good, old fashioned cup of joe.

Makes 12

Ingredients

1 cup Vitacost Gluten-Free Multi-Blend Flour
1/2 tsp. pink salt
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1 Neat Egg Vegan Egg Substitute
1 tsp. vanilla extract
1/4 cup coconut oil
1/2 cup maple syrup
2 cup peaches (about 3 medium), pitted and diced

Directions

  1. Preheat oven to 375 degrees F. Line muffin tin with paper liners.
  2. In a large bowl, combine flour, salt, baking soda and cinnamon.
  3. In a small bowl, prepare Neat Egg.
  4. In a medium bowl, combine vanilla, coconut oil and maple syrup.
  5. Add wet ingredients and egg into dry ingredients and mix until combined.
  6. Gently fold in diced peaches.
  7. Pour about 2 tablespoons of batter into each muffin cup.
  8. Bake 20-25 minutes.
