Never settle for a foil-topped plastic tub of cake topping again with this 3-ingredient homemade version. Not only is it easy to make, you get true chocolate taste (no artificial flavoring here!) with far less sugar than the store-bought kind.

Gluten-Free Yellow Cake With 3-Ingredient Chocolate Icing

Ingredients

Cake
1 gluten-free yellow cake mix
2 cups coconut sugar
1 cup coconut oil
6 eggs
2/3 cup almond milk

Chocolate icing
1/4 cup coconut oil
1/2 cup maple syrup
2/3 cup cacao powder

Directions

  1. Follow package directions to bake yellow cake, substituting coconut oil for butter, almond milk for dairy milk and coconut sugar for refined white sugar. Let cool.
  2. While cake is baking, combine icing ingredients in a high-speed blender and blend to smooth, thick consistency.
  3. When cake is completely cool, frost as desired. Garnish with fresh mint or strawberries.
