Gluten-Free Yellow Cake With 3-Ingredient Chocolate Icing
Ingredients
Cake
1 gluten-free yellow cake mix
2 cups coconut sugar
1 cup coconut oil
6 eggs
2/3 cup almond milk
Chocolate icing
1/4 cup coconut oil
1/2 cup maple syrup
2/3 cup cacao powder
Directions
- Follow package directions to bake yellow cake, substituting coconut oil for butter, almond milk for dairy milk and coconut sugar for refined white sugar. Let cool.
- While cake is baking, combine icing ingredients in a high-speed blender and blend to smooth, thick consistency.
- When cake is completely cool, frost as desired. Garnish with fresh mint or strawberries.
