Grilled Salmon with Mango Salsa


Turn dinner into a fiesta with this quick-marinated fish dish. The salmon is grilled to flaky perfection and topped with a colorful mango-avocado salsa that’s juicy, sweet and bursting with citrusy goodness. Scooped into a warm homemade tortilla or served with your favorite side dish, it’ll have your taste buds dancing the (mango) salsa all night.

Grilled Salmon with Mango Salsa

  1. Gently toss together mango, avocado, tomato, lime juice, olive oil, salt, pepper and cilantro. Cover; chill until ready to serve.
  2. In medium pan, submerge salmon flesh-side down into marinade. Let sit at room temperature 20 minutes.
  3. Heat grill about 500 degrees. Oil salmon skin to prevent sticking.
  4. On pre-soaked wood plank or foil, place salmon skin-side down. Grill 10 to 15 minutes, until internal temperature reaches 145 degrees F and salmon flakes easily with fork.
  5. Remove from heat; let rest. Serve with mango salsa.
