Healthy Meatloaf Muffins

Finally, you can have dinner in five! To get a balanced meal on the table, you usually pull out four pots and pans and about 100 ingredients – some you’re not even sure are necessary. (Hint: they’re not.) Not to mention, your kitchen looks like a kids’ playroom when it’s all set and served. But if you just had these five ingredients and one muffin pan, dinner would be done in 20 minutes. Toss some greens with a vinaigrette and call it a night. Your 24 hours is complete!

2 lb. lean ground beef
1/4 cup unsweetened ketchup
1 Tbsp. dried tarragon
2 tsp. truffle salt
1 tsp. chili powder
Feta cheese (optional)


  1. Preheat oven to 350 degrees F and grease a muffin pan with non-sticking cooking spray or coconut oil.
  2. In a large bowl, add all ingredients and mix to combine. You can use your hands (most efficient) or a spoon.
  3. Using an ice cream scoop, divide meatloaf mixture into muffin pan wells. Top with feta and more tarragon, if desired.
  4. Bake 15-20 minute, or until a toothpick comes out clean.
