When an early morning or afternoon craving hits, you need a snack that satisfies and gives you the energy you need to keep going. Granola bars are easy, but those prepackaged treats from a cardboard box aren’t always the healthiest choice. Thankfully, making your own is simple. No more hard-to-pronounce labels – these bars are made from dried fruit, seeds and ingredients you can trust. Want to skip the oven? Just leave out the water and you don’t have to bake before digging in.
Bars
7 Tbsp. SunButter Sunflower Butter or almond butter
3/4 cup Bob’s Red Mill Almond Flour
1/4 tsp. flaxseed
5 Tbsp. honey
1/2 tsp. Simply Organic Vanilla Extract
1 tsp. Nutiva Coconut Oil with Buttery Flavor
4 dried apricots, diced (you could also use dates, figs or cranberries)
1 Tbsp. water
Topping
2 tsp. sesame seeds
2 tsp. pumpkin seeds
2 tsp. sunflower seeds
Honey, for glaze
Directions
- Preheat oven to 325 degrees F. Line baking tray with parchment paper.
- In bowl, mix bar ingredients until well combined. The dough should be sticky, not too dry.
- Press mixture into pan. Add seeds to top. With brush, glaze with honey.
- Bake for 11-12 minutes, until golden brown.
