Frozen Mint Chocolate Protein Patties

Like a hot potato, these ice-cold peppermint patties need to move quickly. Dilly-dally too long, and they’ll melt in your hands – not in your mouth. Plus, you’ll miss out on fresh mint, a hard, dark chocolate shell and five grams of protein in just one patty. Though frozen for over an hour, these treats will be hot-hot-hot. Act fast!

Makes 12 patties
Macros per patty: 196 calories | 5 g protein | 13.6 g carbs | 14.8 g fat | 10.2 g sugar | 2.3 g fiber

Ingredients

1/2 cup coconut butter, melted
1/4 cup Vitacost Coconut Oil, melted, plus 1/4 tsp.
1/4 cup Vitacost Raw Honey
1/4 cup unsweetened almond milk
1/2 cup fresh mint leaves
2 scoops ARO Vanilla Whey Protein Complex PLUS
1 Vitacost Peppermint in Dark Chocolate Bar, chopped

Directions

  1. Prepare a cupcake pan with 12 silicone or paper liners.
  2. In a food processor, add coconut butter, coconut oil, honey, almond milk and mint leaves. Process until smooth and well combined.
  3. Add protein powder and blend again, making sure powder is fully incorporated.
  4. Spoon mixture into cupcake liners, distributing evenly among the 12 wells. Place in freezer for at least 1 hour to set.
  5. Meanwhile, add chocolate bar pieces to a microwave-safe bowl. Add 1/4 teaspoon coconut oil and microwave in 20-second intervals, stirring between each interval. Heat until completely melted and smooth.
  6. Remove patties from freezer. Spoon about 1 tablespoon melted chocolate over each patty. Place back in freezer for another 30 minutes, or until chocolate has hardened.
  7. Mint chocolate patties will store in the freezer for up to 3 weeks.
