Honey-Orange Roasted Broccoli

Broccoli? Hard pass. Whether you’re trying to convince yourself or your little one that broccoli is delicious and enjoyable, you might want to try jazzing it up. Here’s one way to turn a plate of bitter and boring into yum and fun. First, whisk together this sweet honey and orange marinade and mix it up with broccoli florets. Roast for 15 minutes and you’re done! It’s a simple, taste-bud-pleasing way to get more veggies to the table.

Serves 2

Ingredients

12 oz. broccoli, cut into small florets
3 Tbsp. honey
1 Tbsp. orange juice or freshly squeezed
1 Tbsp. olive oil
1/2 tsp. pink salt
1/4 tsp. black pepper

Directions

  1. Preheat oven to 400 degrees F.
  2. In mixing bowl, whisk together honey, orange juice, olive oil, salt and pepper. Toss with broccoli.
  3. Spread a flat layer of broccoli on a baking sheet.
  4. Roast about 15 minutes.
  5. Remove from oven and piece with fork to check if broccoli is roasted to your preferences.
