This protein-packed bread is bursting with blueberry flavor! It’s a smart choice when you’re craving something sweet, because it’s chock-full of fiber to make you feel happily full. The recipe is almost too simple to put together, which is why it makes the perfect healthy house-warming gift. Then again, you may not want to share. In that case, just pour yourself a hot cup of herbal tea, relax, sit back and enjoy this gooey white chocolate-glazed sweet bread without a bite of guilt!

Iced Blueberry Protein Bread

Ingredients

Bread

5 scoops vanilla protein powder
1 cup oat flour
¼ cup honey
2 Tbsp. melted coconut oil
1 cup unsweetened almond milk
1 tsp. baking powder
½ tsp. ground ginger
1 egg
½ cup dried blueberries

Icing

About ½ cup white chocolate baking chips

  1. Preheat oven to 350 degrees F and coat a loaf pan with non-stick cooking spray (if needed).
  2. In a large bowl, combine all bread ingredients (except blueberries). Stir until thoroughly mixed.
  3. Mix in blueberries and pour batter into prepared loaf pan.
  4. Bake approximately 35-40 minutes, or until a toothpick comes out clean.
  5. In a small bowl, microwave white chocolate chips until melted. Drizzle melted chocolate over cooled bread and enjoy!
