Iced Blueberry Protein Bread

5 scoops vanilla protein powder
1 cup oat flour
¼ cup honey
2 Tbsp. melted coconut oil
1 cup unsweetened almond milk
1 tsp. baking powder
½ tsp. ground ginger
1 egg
½ cup dried blueberries
Icing
About ½ cup white chocolate baking chips
- Preheat oven to 350 degrees F and coat a loaf pan with non-stick cooking spray (if needed).
- In a large bowl, combine all bread ingredients (except blueberries). Stir until thoroughly mixed.
- Mix in blueberries and pour batter into prepared loaf pan.
- Bake approximately 35-40 minutes, or until a toothpick comes out clean.
- In a small bowl, microwave white chocolate chips until melted. Drizzle melted chocolate over cooled bread and enjoy!
