Irish Colcannon With Kale

Ingredients

  • 4 potatoes chopped, boiled and mashed with skin on
  • 3-1/2 cups kale chopped
  • 1 stick Irish grass-fed butter
  • 4 Green onions chopped
  • 2 Tbsp. parsley chopped Salt and pepper, to taste
  • 3/4 cup unsweetened almond milk
  • salt and pepper

Instructions

  1. Boil potatoes in large pot of water.
  2. Remove from stove top and drain water. While potatoes are boiling, in large skillet, steam chopped kale in butter.
  3. Add green onions, salt and pepper.
  4. Cook for approximately 3 minutes, until slightly wilted/steamed.
  5. In large pot, mash potatoes, adding milk.
  6. Add seasoned steamed kale and stir in parsley.
  7. Stir over low to medium heat for approximately 5-7 minutes. Serve warm.
