- 10 oz. kale roughly chopped
- 1 orange peeled and sliced
- 2/3 cup pomegranate seeds
- ¼ cup olive oil
- 1 Tbsp. lemon juice
- 1 clove garlic minced
- Salt to taste
- Black pepper to taste

In large bowl, mix olive oil, lemon juice, garlic, salt and pepper.

To bowl, add kale and gently massage in dressing; let sit for 10 minutes, tossing every 2-3 minutes to soften kale.
