Keto Chocolate-Peppermint Truffles

Whether you follow a ketogenic diet or you’re just looking to add nourishing plant-based fats into your day, these truffles are an exceptional treat. The holiday-favorite combination of flavors satisfies cravings for chocolate and candy canes at the same time! Plus, these bite-sized morsels only take a few minutes to make. Dessert doesn’t get easier, or tastier, than this.

Makes 8-10 truffles

Ingredients
1 cup raw coconut butter
1/2 cup raw cacao powder (or unsweetened cocoa powder)
2-3 drops food-grade peppermint essential oil (or peppermint flavoring)
2-3 drops stevia

Optional
2 Tbsp. raw cacao nibs
2 Tbsp. fine macaroon unsweetened coconut

Directions

  1. Using double boiler, slightly melt coconut butter.
  2. In food processor, combine all ingredients. Blend to thick consistency.
  3. Working quickly, scoop dough into wells of mini muffin pan and refrigerate until truffles are solid.
