Makes 8-10 truffles
Ingredients
1 cup raw coconut butter
1/2 cup raw cacao powder (or unsweetened cocoa powder)
2-3 drops food-grade peppermint essential oil (or peppermint flavoring)
2-3 drops stevia
Optional
2 Tbsp. raw cacao nibs
2 Tbsp. fine macaroon unsweetened coconut
Directions
- Using double boiler, slightly melt coconut butter.
- In food processor, combine all ingredients. Blend to thick consistency.
- Working quickly, scoop dough into wells of mini muffin pan and refrigerate until truffles are solid.
