Keto Dark Chocolate Peanut Butter Truffles
Ingredients
- 1 1/2 cups smooth, unsweetened peanut butter, melted
- 3/4 cup coconut flour
- 1/4 cup RSP Truefit Vanilla
- 1/4 cup coconut sugar
- 1 tsp vanilla extract
- Pinch salt
- 2 cups dark chocolate, melted
- 1 Tbsp coconut oil

In a medium mixing bowl, mix together the peanut butter, coconut flour, protein powder, coconut sugar, vanilla and salt.

On a lined baking sheet with parchment, use a cookie scoop to form round truffles out of the dough. Freeze until firm, about 1 hour.

In a medium bowl, whisk together the melted chocolate and coconut oil.

Using a fork, dip the peanut butter truffles into the chocolate until completely coated. Return to the baking sheet and repeat for remaining truffles. Drizzle more melted peanut butter then freeze truffles until chocolate is fully set, about 10 minutes.
