Does your everyday eating plan include dessert? You may think that your commitment to cutting certain ingredients from your diet (or adding them in) leaves little room for indulging your sweet tooth – or that doing so is a one-way ticket on a never-ending guilt trip. This recipe proves otherwise! With just a few minutes of prep, you can create these keto-friendly truffles, made with creamy peanut butter and covered in decadent dark chocolate. They’re the ultimate indulgence, with no guilt involved!
Keto Dark Chocolate Peanut Butter Truffles
In a medium mixing bowl, mix together the peanut butter, coconut flour, protein powder, coconut sugar, vanilla and salt.
On a lined baking sheet with parchment, use a cookie scoop to form round truffles out of the dough. Freeze until firm, about 1 hour.
In a medium bowl, whisk together the melted chocolate and coconut oil.
Using a fork, dip the peanut butter truffles into the chocolate until completely coated. Return to the baking sheet and repeat for remaining truffles. Drizzle more melted peanut butter then freeze truffles until chocolate is fully set, about 10 minutes.
