Ingredients
- 1 head cauliflower cut into florets
- 1 Tbsp. olive oil
- 2 tsp. garlic minced
- 1 Tbsp. Nutiva Coconut Oil with Buttery Flavor or plant-based or dairy butter
- 1 Tbsp. Bragg Nutritional Yeast
- 2 Tbsp. grated vegan Parmesan cheese or dairy Parmesan cheese
- ½ tsp. Redmond Real Salt Sea Salt
- ⅛ tsp. freshly ground black pepper
- 1 chive stalk diced, for garnish
Instructions

In saucepan, cover cauliflower with water. Bring to boil and cook until fork tender, 10-15 minutes. Drain very well. (Note: Use kitchen towel to squeeze out excess water.)

In small skillet over low heat, heat olive oil, add garlic and stir until softened, about 5 minutes.

In blender, combine all ingredients and blend until desired consistency. (Note: Blend less for chunkier texture or more for creamier mash.)

Serve topped with butter/buttery oil and chives.
Note: Blend in cashew or dairy cream cheese for extra protein, fats and cheesy flavor.
