Finding a clever way to incorporate last night’s leftovers into today’s meal is something modern families all strive to do to reduce food waste and stretch grocery budgets. Many of us have an abundance of turkey left over this time of year and this recipe cleverly brings it back to the table as breakfast, brunch, lunch or dinner. Quiche can work for any meal and is a tasty, easy and healthy way to extend a surplus of a good thing.

Leftover Turkey & Veggie Quiche (Gluten-Free)

Ingredients
Crust
- 1/3 cup water
- 2 Tbsp. apple cider vinegar
- 2 Tbsp. olive oil
- 1 box Simple Mills Gluten-Free Almond Flour Pizza Dough Mix
Filling
- 1 Tbsp. olive oil
- ½ cup onion
- 1 cup broccoli chopped
- 1 cup sweet potatoes diced
- 1 tsp. Italian seasoning
- 1 tsp. garlic powder
- 1 cup almond milk
- 5 eggs
- ½ lb. cooked turkey
Instructions

Preheat oven to 350 degrees F.

In large mixing bowl, combine apple cider vinegar, olive oil, water and pizza dough mix. Stir together until ball of dough forms.

In quiche pan, press dough on bottom and up sides. Pre-bake for 10 minutes.

In sauté pan with olive oil, cook sweet potatoes, broccoli and onion until soft. Season with Italian seasoning and garlic powder.

In mixing bowl, whisk together almond milk and eggs. Stir in vegetable mixture and turkey.

Add filling mixture to crust and bake 35-40 minutes until filling is set.

Cool 10-15 minutes before slicing.
