Lentil & Spinach Soup

It’s easy to find a recipe that’s quick, nutritious or memorable, but it’s not every day you come across one that’s all three – like this hearty one-pot soup. A medley of wholesome veggies, lentils and spices come together to create a nutrient-dense, plant-based meal that’s easy enough for busy weeknights and tasty enough to serve on relaxed weekends. In addition to its other virtues, it’s also vegan friendly, low-fat and goes from fridge to table in under an hour.Top View Lentil Spinach Soup in White Bowl on White Wood Table | Vitacost Blog
