Lime & Pomegranate Margarita with Coconut Sugar

You’re celebrating, and that’s OK. It’s your day off, so you deserve to kick back, relax and enjoy a refreshing cocktail. You may not drink often, but a backyard party or cookout is the perfect excuse to indulge. Here’s a simple margarita recipe that packs in delicious fruity flavor and a bit of sweetness. Prefer mocktails? Sub the liquor with coconut juice or coconut water.

Serves 1

Ingredients

2 Tbsp. pomegranate juice powder
2 oz. lime juice
1 Tbsp. light agave
0.5 oz. Cointreau
1.5 oz. Don Julio Tequila
Ice

For garnish

Coconut sugar
Slice of lime

Directions

  1. Rub lime over rim of pint-sized cup, glass or mason jar and dip into coconut sugar to coat. Add ice to cup.
  2. In shaker, combine all ingredients and shake. Pour into glass and garnish with lime.

Note: If desired, skip the Cointreau and tequila and mix in coconut juice or coconut water.
