  1. Preheat oven to 350 degrees F. Grease 8-inch cast iron skillet with coconut oil spray.
  2. In medium mixing bowl, combine flours, salt and baking powder.
  3. In separate bowl, stir together egg replace, water, coconut milk, applesauce and vanilla.
  4. Stir wet ingredients into dry ingredients. Fold in blueberries.
  5. Spread evenly into skillet.
  6. Bake for 20-25 minutes until cooked through.
