Vegan Lemon Pancakes (Gluten-Free)
- 1 cup gluten-free all-purpose flour
- 1/8 tsp. pink salt
- 1/2 tsp. baking powder
- 2 tsp. lemon zest
- 1/4 cup lemon juice
- 1/4 tsp. lemon extract (optional)
- 1 Tbsp. egg replacer (+ 2 Tbsp. water)
- 1/2 cup applesauce
- 1/2 cup oat milk (or milk of choice)
- Avocado oil spray (for cooking)
- In mixing bowl, whisk together pancake batter ingredients.
- Heat pan on stovetop to medium heat, spray with avocado oil.
- Onto hot pan, pour 3 tablespoons batter per pancake. Cook pancakes 2 minutes then flip and cook additional 1-2 minutes.
- Serve warm with toppings of choice.
