Crust
¾ cup oat flour
¼ cup granulated Swerve sweetener (or sweetener of your choice)
2 Tbs coconut oil
1 tsp vanilla extract
Filling
4 eggs
½ cup Erythritol
1/3 cup oat flour
½ cup lemon juice
1 tsp vanilla extract
Topping
Sprinkling of powdered Swerve
Directions
- Preheat oven to 350 degrees.
- Coat a 9 x 9 pan with crust ingredients.
- Bake crust for 5-10 minutes, then let cool.
- Pour filling over crust.
- Return pan to oven and cook for an additional 10 minutes.
- Top with powdered Swerve or sweetener of your choice.
