Luscious Lemon Bars

Tart yet sweet, with a creamy texture and a delicate, oat-flour-based crust, these lemon bars are light on the lips and on the hips, with just 130 calories per serving. The one thing this dessert lacks is sugar, using the natural plant-based sweetener Swerve (erythritol) instead.

Use a plant-based sugar substitute like Swerve to reduce the calorie count of this decadent dessert.

 

Yield: 9 bars

Ingredients

Crust

¾ cup oat flour
¼ cup granulated Swerve sweetener (or sweetener of your choice)
2 Tbs coconut oil
1 tsp vanilla extract

Filling

4 eggs
½ cup Erythritol
1/3 cup oat flour
½ cup lemon juice
1 tsp  vanilla extract

Topping

Sprinkling of powdered Swerve

Directions

  1. Preheat oven to 350 degrees.
  2. Coat a 9 x 9 pan with crust ingredients.
  3. Bake crust for 5-10 minutes, then let cool.
  4. Pour filling over crust.
  5. Return pan to oven and cook for an additional 10 minutes.
  6. Top with powdered Swerve or sweetener of your choice.

Nutritional information per slice: 130 calories, 7.5 grams of fat, 10 grams of carbs, 5.6 grams of protein
