Matcha Coconut Milk Ice Cream

Your favorite morning beverage is coming to an ice cream bowl near you! Matcha green tea powder is combined with the refreshing flavors of peppermint and coconut in this vegan recipe. No ice cream maker required–just toss the ingredients in your blender, freeze and enjoy!

Green Tea Matcha Mint Ice Cream Served in Coconuts |

Serves 2


1 cup cashews
2/3 cup coconut milk or almond milk
1 tsp. vanilla extract
4 Tbsp. maple syrup
1/4 tsp. Redmond Real Salt
3 drops food-grade peppermint essential oil
2 Tbsp. matcha green tea powder
Mint leaves, to serve
Organic chocolate, shaved, to serve


  1. In a food processor or high-speed blender, combine all ingredients (except for the mint leave and chocolate) and blend until mixture is creamy and frothy.
  2. Pour mixture into a freezer-safe container and freeze for 4-5 hours or overnight.
  3. To serve, garnish with shaved chocolate and mint leaves.

Liana’s tip: For even creamier ice cream, after freezing the mixture for a few hours, transfer it back to blender or processor. Blend again while still partially frozen and then freeze for another few hours.
