Salad
- 2 cans (30 oz.) chickpeas drained, rinsed
- 1 can (14 oz.) artichoke hearts drained, chopped
- 1 small sweet red pepper medium dice
- 2 cups mini cucumber peeled, small dice
- 1 cup grape tomato cut in 1/2
- 1/3 cup Kalamata olives pitted, coarsely chopped
Roasted sweet pepper dressing
- 2 roasted sweet red peppers drained
- 3 Tbsp. red wine vinegar
- 5 Tbsp. olive oil
- 1/2 tsp. garlic powder
- 1/2 tsp. sea salt
- Fresh ground pepper to taste
- Handful fresh parsley basil and oregano leaves, or herbs of choice
Instructions

Combine chickpeas, artichoke hearts, sweet pepper, cucumbers, grape tomatoes and kalamata olives in mixing bowl.

In blender or blender jar, blend together roasted sweet peppers, red wine vinegar, olive oil, garlic powder, salt, pepper and fresh herbs until thoroughly combined and smooth.
