Mediterranean Chickpea Salad with Roasted Sweet Pepper Dressing

Ingredients

Salad

  • 2 cans (30 oz.) chickpeas drained, rinsed
  • 1 can (14 oz.) artichoke hearts drained, chopped
  • 1 small sweet red pepper medium dice
  • 2 cups mini cucumber peeled, small dice
  • 1 cup grape tomato cut in 1/2
  • 1/3 cup Kalamata olives pitted, coarsely chopped

Roasted sweet pepper dressing

Instructions

  1. Combine chickpeas, artichoke hearts, sweet pepper, cucumbers, grape tomatoes and kalamata olives in mixing bowl.
  2. In blender or blender jar, blend together roasted sweet peppers, red wine vinegar, olive oil, garlic powder, salt, pepper and fresh herbs until thoroughly combined and smooth.
  3. Pour dressing over chickpea mixture and toss to combine.
  4. Serve as is or on top of mixed salad greens.
