Here’s a dessert that’ll make hearts crumble. Cobblers have a way of doing that. Their fruity bottoms and oat toppings are a balanced mix of soft and crunchy, comforting but healthy. Meanwhile, there’s a warm, charming sweetness you simply can’t overcome. Many a sweet tooth will try to gobble that cobbler, but only yours will even get a chance. How’d you get so lucky? This mini blueberry crumble has just enough love for one.
Filling
1 cup fresh mixed berries
1/2 Tbsp. oat flour
1/2 Tbsp. lemon juice
Crumble Topping
1 scoop cinnamon protein powder
1/4 cup oats
1 tsp. cinnamon
1 Tbsp. honey
1 Tbsp. melted ghee
Directions
- Preheat oven to 350 degrees F and coat a large ramekin with nonstick cooking spray or coconut oil.
- In a medium bowl, add filling ingredients and gently mix until combined. Pour filling into greased ramekin.
- Rinse out your bowl and pat dry. Add crust ingredients and stir until well combined. You can mash these a little bit to make crumbly.
- Spoon crumble over fruit filling and bake 15 minutes, or until crumble topping begins to turn golden.
