Big celebrations call for over-the-top desserts. You can just imagine a three-layered cake covered in a sleek fondant blanket and adorned with edible flowers and sugary swirls. But all that pomp and perfection only works for certain occasions. If your soiree is more subdued, try this rustic-chic treat, which gives you a lot more for much less. The naked cake is simple, charming and has just the right touch of sweet. Best of all, you can make this trendy wedding showstopper all on your own – in case you need another big thing on your to-do list.

Cake
3/4 cup unsweetened almond milk
3/4 cup plain Greek yogurt
1/4 cup plus 2 Tbsp. Vitacost Coconut Oil, melted
4 eggs
2 cups whole wheat flour
1-1/4 cups Vitacost Almond Flour
1-1/2 scoops ARO Vanilla Whey Protein Complex PLUS
3/4 cup Vitacost Xylitol
3 tsp. baking powder
1 tsp. vanilla extract
Vanilla Icing
2/3 cup plain cream cheese, softened
1/2 cup plain Greek yogurt
1/2 cup Vitacost Xylitol
1 tsp. vanilla extract
Toppings: fresh strawberries, blackberries & blueberries
Directions
1. Preheat oven to 350 degrees F and coat 3 mini cake pans (about 6 inches round) with non-stick cooking spray.
2. In a large bowl using a hand mixer, beat together first four cake ingredients until smooth.
3. Add remaining cake ingredients and blend on low speed until well combined.
4. Evenly distribute cake batter among three pans, using a spatula to smooth down.
5. Bake 26-30 minutes. Let cool on a wire rack while you prepare the icing.
6. In a separate mixing bowl, beat cream cheese until smooth. Add remaining icing ingredients and beat until light and fluffy.
7. Use a serrated knife to trim tops and sides of cake layers to get them to uniform size.
8. To assemble: Place one cake layer on serving platter. Spread 1/3 icing over top. Place second cake layer on top of icing. Spread another 1/3 icing over second layer. Place third cake layer on top of icing and spread remaining icing on top of the final layer.
9. Use a spatula to smooth down icing before topping with fresh sliced berries.
