Dear Summer: We really miss you. Love, Everyone. Since she won’t be replying any time soon, you might as well keep her around in spirit. This blueberry cake will bring you right back to those long, lazy days when the only ice around was in your glass of lemonade and dressing in layers meant you threw on a T-shirt over your swimsuit. Oh, and fresh fruit. Sweet, plump little berries that brightened your breakfasts and dazzled in desserts–like this one. Keep your oven off, for old times’ sake. Only 10 more weeks ‘til spring!

No-Bake Blueberry-Cacao Pie

No-Bake Blueberry-Cacao Pie

Ingredients

Crust
1/2 cup walnuts
3/4 cup almonds
6 dates
2-1/2 Tbsp. cacao powder

Filling
1 + 1/4 cup of cashews
1/3 cup maple syrup
1/3 cup lemon juice
2 Tbsp. water
1/3 cup coconut oil
4 Tbsp. fresh blueberries
Dash vanilla extract
Pinch of sea salt

Directions

  1. In food processor, combine all crust ingredients and pulse until a dough-like mixture is formed.
  2. Press dough into pie dish to form crust.
  3. To make filling, combine all filling ingredients in food processor and blend until smooth.
  4. Pour filling into crust.
  5. Freeze pie for one hour or until firm.
