Chocolate-Caramel Dessert Squares (Raw & Vegan)

These no-bake dessert bars are made with vegan chocolate and caramel, require no heat whatsoever, and are naturally sweetened with dates and maple syrup. The result is three layers of pure, delicious perfection you can feel good about indulging in.

Ingredients

Base layer
2 Tbsp. coconut oil
1 tsp. vanilla extract
1/4 tsp. Redmond Real Salt
1 cup walnuts
2 cups dates

Caramel layer
1/4 cup maple syrup
1/4 cup almond butter or SunButter  Sunflower Butter
1/3 cup coconut oil
1 tsp. vanilla extract
1/4 tsp. salt
1/4 cup dates, seeded
1/4 cup raw unsalted macadamia nuts
1 Tbsp. sesame seeds

Chocolate layer
2/3 cup pHresh Superfoods Organic Cacao Powder
1/2 cup maple syrup
1/4 cup extra virgin coconut oil

Directions

  1. Grease 8”x8” square pan with coconut oil.
  2. To make base layer: In food processor, add all ingredients and blend until wet, chunky mixture forms. Press firmly into the bottom of greased pan.
  3. To make caramel layer: In food processor, blend dates, macadamia nuts and sesame seeds until well combined and smooth. In small pan, combine blended mixture with remaining ingredients and cook over medium-low heat. Whisk together until completely melted. Pour over bottom layer in pan and refrigerate to set.
  4. To make chocolate layer: In medium bowl, combine all ingredients and whip until smooth (use blender, if preferred). Pour over caramel layer and freeze for 20 minutes to set.
