No-Bake Paleo Chocolate Bars

Fat is the new sugar. And with that transition comes a shift from sweet to more savory palates. Does that mean dessert goes out of style? Hardly. When you get a hankering for chocolate, simply reach for more fat. Coconut is one of the bests of the bunch and makes a fine, no-fuss treat once you mix it with raw cacao and creamy cashew butter. With such real, wholesome ingredients, these no-bake treats beat an old-fashioned candy bar any day.

Ingredients

1/2 cup raw cacao powder
1/2 cup cashew butter
1/2 cup coconut butter, melted
1 tsp. cinnamon
1/2 tsp. non-alcoholic vanilla extract
Pinch of Himalayan pink salt

Directions

  1. Line a small, glass baking dish with parchment paper and set aside.
  2. In a large bowl, combine all ingredients and stir until well combined.
  3. Pour batter into baking dish, using a spatula to smooth down evenly.
  4. Place in refrigerator for at least 1 hour, or until mixture has set.
  5. Cut, or break, into pieces when ready to serve.
