Orange Asparagus Pasta Salad
8 oz. penne pasta
1 lb. fresh asparagus, cut into 1-inch pieces
1/4 cup freshly grated Parmesan cheese
2 Tbsp. olive oil
3 Tbsp. freshly squeezed orange juice
1/4 cup finely chopped pistachios
Sea salt and pepper, to taste
1. Cook pasta according to package directions; drain and rinse under cool water.
2. In a large bowl, gently toss all ingredients.
3. Serve immediately.
