This easy-to-make, paleo-friendly salad is made with just a few whole-food ingredients, including kale, which you’ll massage to perfection, hazelnuts and – you guessed it – oranges! The creamy lemon-honey dressing is super simple and can be easily modified to be vegan by swapping honey for agave, coconut nectar or pure maple syrup.

Paleo Citrus Salad with Lemon-Honey Tahini Dressing
Ingredients
Salad
- 2 bunches organic lacinato kale
- 3 oranges, peeled
- 1/2 cup hazelnuts, halved & toasted
- 1/2 tsp. kosher salt
Dressing
- 4 tbsp. extra-virgin olive oil
- 3 Tbsp. lemon juice
- 2 Tbsp. tahini
- 1 Tbsp. honey
- 1 Tbsp. apple cider vinegar
- Salt & pepper to taste
Instructions

In small bowl, whisk olive oil, lemon juice, tahini, honey, vinegar, salt and pepper. Set aside.
Salad

Rinse kale and pat dry. Separate stalk from leaves.

On cutting board, layer around 8 leaves together and roll tight. Cut vertically into 1/2-in. pieces. Continue with remaining leaves.

Transfer kale to large bowl and sprinkle salt on top. Use hands to squeeze and massage kale leaves until they begin to soften and wilt. Keep massaging until desired tenderness is reached.

Toss in half the dressing and transfer to serving platter.

Slice oranges into wedges and arrange on top of salad. Garnish with toasted hazelnuts and serve with remaining dressing.
