There’s a big holiday coming up! No, not St. Patrick’s Day (though it’s on the party-excuse checklist, too). March 14th marks the occasion known around the world as Pi day, a celebration of the mathematical symbol “π,” a number that starts with 3.14 (get it?) and goes on forever—much like our love for a different kind of pie. Nerdy or not, everyone can enjoy a slice of fun this Saturday. Make this paleo creation and you’ll be adored infinitely by everyone in your circle.

Paleo Strawberry Pie

Ingredients

Filling
4 cups sliced strawberries
1 cup organic honey
1 Tbsp. cinnamon

Crust
3/4 cup almond meal
3/4 cup coconut flour
1/2 cup coconut oil, liquid
1 Tbsp. unprocessed organic cocoa powder
1 tsp. raw honey
1/4 tsp. salt
Water as needed
Spray coconut oil

Directions

  1. To make filling, combine filling ingredients in baking dish and bake for 20 minutes at 350 degrees F.
  2. To make crust, combine crust ingredients in a bowl and add water 1 tablespoon at a time until it becomes a moist, spreadable. Spray 9” pie dish with coconut oil, then spread crust mixture into dish. Top with filling.
  3. Bake pie at 350 degrees F for 30 minutes or until crust becomes crispy.
