Pomegranate Chia Pudding with Collagen

Eating a healthy breakfast on the go just got much easier! This chia pudding with pomegranate, collagen and non-dairy milk is perfect to take to the office or school. Make it the night before and grab it from the fridge on your way out – just add pomegranate before serving. Use any full-fat milk you’d like, but I recommend pea milk or coconut milk. Coconut milk will make a very thick, creamy consistency.

Serves 1

Ingredients

1 cup non-dairy milk (coconut milk and pea milk are great options!)
3 Tbsp. chia seeds
2 tsp. agave syrup
Dash cinnamon
Dash cardamom
1 Tbsp. collagen
1/2 cup pomegranate arils, to top

Directions

1. In 12-oz mason jar or other 2-cup container, stir together all ingredients, except for pomegranate arils, until well combined.

2. Cover and chill for at least 1 hour or overnight.

3. Before serving, top with pomegranate arils.
