Christmas might be over, but who says the festivities have to end here? Gift-bearing stragglers still could show up at your door. Or maybe you’ll count down with a crowd on the 31st. Either way, keep the party hoppin’ all the way into January with this exceptionally dazzling dessert. Spiked with orange zest and topped with bright-red pomegranate arils, it’s perfect for celebrating a successful 2018 – or to ring in 2019 with a bit of flair. Happy New Year!
Ingredients
Cake
1 cup hazelnut flour
1 cup all-purpose flour
½ cup brown sugar
1 tsp. baking powder
½ tsp. cinnamon
½ tsp. baking soda
½ tsp. salt
2 Tbsp. maple syrup
¼ cup Greek yogurt
2 eggs, beaten
Juice and zest of ½ orange
1 cup pomegranate seeds
Glaze
4 oz. cream cheese (room temperature)
1 Tbsp. ghee butter
1 cup confectioner’s sugar
¼ tsp. vanilla extract
Directions
1. Preheat oven to 350 degrees F. Spray bundt cake pan with non-stick spray.
2. In large bowl, combine all dry cake ingredients. In another bowl, combine wet ingredients. Pour wet mixture into dry and use electric mixer to mix.
3. Bake cake for 35-40 minutes or until toothpick inserted in center comes out clean.
4. In large bowl, combine glaze ingredients. Use electric mixer to mix. Pour glaze over cake and top with pomegranate arils.
