Spicy Leftover Mashed Potato Croquettes With Dipping Sauce

Ingredients
Croquettes
- 2 cups cold mashed potatoes
- 2 eggs divided, beaten
- 1/2 cup all-purpose organic flour or gluten-free flour
- 1/3 cup shredded cheddar cheese or mozzarella or vegan cheese
- 1-2 tsp. fresh jalapeño finely chopped
- 1/4 tsp. garlic powder
- 1/4 tsp. black pepper
- 1/2 cup bread crumbs or quinoa flakes, ground nuts or ground flaxseeds
- Olive oil cooking spray
- Smoked sea salt to serve, optional
Dipping sauce
- 16 oz. cream cheese or vegan cream cheese, softened
- 1/4 cup chives chopped
- Pinch Vitacost Himalayan Pink Salt
- Paprika optional
- Dill optional
Instructions

For dipping sauce, combine softened cream cheese with freshly chopped chives and salt. Add spices of choice such as paprika or dried dill, if desired. Divide before adding spice choices for dip options. Chill dip before serving to allow flavors to meld.

In mixing bowl, combine mashed potatoes, salt, pepper, garlic powder, cheese, jalapeño and 1 beaten egg. Mix well.

In small bowl, beat 1 egg.

In second bowl, place flour.

In third bowl, place bread crumbs or flaked quinoa, ground nuts or ground flaxseeds.

Scoop enough mashed potato mixture to roll into 1” x 2-½” oval shape.

Roll potato ball in flour to coat, then dredge in egg wash and roll in bread crumbs until coated.

Place each ball on baking sheet. Continue 3 steps until all balls are done. Spray each with olive oil cooking spray.

Cook in basket of air-fryer at 400 degrees F for 10-15 minutes. Alternately, bake in casserole pan in oven at 400 degrees F about 12-14 minutes, or fry in skillet with hot oil about 3-4 minutes. Sprinkle with smoked salt to serve, if desired. Serve with dipping sauce.
