Puffed Millet Protein Snack Balls

What happens when you don’t got milk? You could quickly run to a drive-thru window or skip breakfast entirely, but you’d be denying yourself what you really want. Serial cereal eaters want something crunchy to start their day – and that’s what you’ll get with these puffed millet protein balls. Millet is the smallest of the grains, but it offers big nutritional value and lots of crunch. Mix it with sweet maple syrup and protein powder for a well-rounded, no-bake breakfast or snack. There’s no question this recipe does a body good.

Ingredients

1-1/2 cups puffed millet (or puffed quinoa)
1 scoop vanilla protein powder
2/3 cup crunchy almond butter
1/4 cup maple syrup

Directions

1. In a large bowl, add all ingredients and stir until well combined.

2. Using about 1 tablespoon of dough, roll into balls.

3. Place balls in an air-tight container and store in refrigerator to help them firm up.
