Millet is the smallest of the grains, but it offers big nutritional value and lots of crunch. Mix it with sweet maple syrup and protein powder for a well-rounded, no-bake breakfast or snack. Ingredients
1-1/2 cups puffed millet (or puffed quinoa)
1 scoop vanilla protein powder
2/3 cup crunchy almond butter
1/4 cup maple syrup
Directions
1. In a large bowl, add all ingredients and stir until well combined.
2. Using about 1 tablespoon of dough, roll into balls.
3. Place balls in an air-tight container and store in refrigerator to help them firm up.
