Puffed Quinoa Bars with Coconut and Almond Butter

Your kids request those crispy, marshmallow-coated bars for snack time, but after a quick peek at the nutrition facts label, you’re unsurprisingly saying “no way!” You can’t deny the appeal of those fun, crackling treats, so instead of seeing their eager, excited faces turn to disappointment, surprise them with these homemade bars loaded with pop. With snappy puffed quinoa, shredded coconut, sweet maple syrup and almond butter, your little ones will be all smiles when they munch on these quinoa bars.

Makes 16 bars

Ingredients

3/4 cup Vitacost Quinoa
1 cup shredded coconut
2 cups almond flour
1/2 cup Vitacost Maple Syrup or Vitacost Organic Honey
1/2 cup Vitacost Almond Butter or SunButter  Sunflower Butter
3 Tbsp. Vitacost Coconut Oil
2 Tbsp. Nutiva Coconut Oil with Buttery Flavor
1/2 tsp. Redmond Real Salt
1 tsp. vanilla extract

Directions

  1. Heat saucepan over low heat. Add quinoa and shake pan to distribute heat and prevent burning for about 8-10 minutes or until quinoa is slightly toasted golden brown. Allow to cool fully before proceeding. Note: you may add about a teaspoon of coconut oil to pan for flavor and more even cooking.
  2. In a large bowl, combine all ingredients including cooled, puffed quinoa.
  3. Transfer ingredients to baking pan. Enjoy immediately or chill in fridge for 2 hours to set and slice for later.

Note: If desired, add 1/2 cup of Enjoy Life Chocolate Chips to batter.
