Ingredients
- 1 cup warm water
- 4 tsp. active dry yeast
- 1/4 cup sugar
- 3 cups gluten-free flour
- 1 Tbsp. xanthan gum
- 2 tsp. baking powder
- 1-3/4 tsp. salt
- 4 eggs
- 1/4 cup olive oil
Instructions

Place 3/4 cup warm water, yeast and sugar in a small bowl; let sit for 5 minutes until bubbly. Prep dough ingredients.

Using stand mixer, combine flour, xanthan gum, baking powder and salt. Whisk together. Add yeast mixture, eggs and oil. Mix on medium speed with dough hook. Add 1/4 cup water, 1 tablespoon at a time, until dough is sticky but touchable. Knead in mixer for 5 minutes.

In medium bowl with lid, combine cinnamon and sugar. Scoop tablespoon-sized dough balls and drop into cinnamon sugar. Cover and shake to coat.

Place dough balls into greased 12-cup Bundt pan, evenly distributing. Pour remaining cinnamon sugar over top, cover and let rise in warm place until doubled, about 1 hour.

Preheat oven to 350 degrees F. Pour melted butter over risen dough, place pan on sheet pan to catch any drips and bake for 30-40 minutes until golden brown and set. Let cool for 3 minutes before turning out onto platter.
