Quinoa, avocado, crisped corn, black beans and avocado mix and mingle with bright bits of cilantro, jalapeño, red onion and black cumin seeds. A simple, fresh dressing of olive oil and lemon is the easy music that makes it all dance together. Make this dish in thirty minutes!

Instructions

  1. Cook quinoa per package directions. Chop salad ingredients, leaving avocado until last to prevent browning.
  2. For corn, in sauté pan, heat avocado oil, add minced jalapeño and sauté several minutes.
  3. Add corn and sauté 5-10 minutes, stirring occasionally. Set aside.
  4. In small bowl, whisk together dressing ingredients.
  5. In serving bowl, combine quinoa and salad. Drizzle over dressing and toss to coat evenly.
  6. Garnish with scallion when serving.

Recipe Notes

  • Tip: Rinse black beans before adding to salad to prevent salad from staining black.
