Ingredients
Salad
- 1 Tbsp. avocado oil
- 2 cups uncooked quinoa
- 1 avocado cubed
- 1 cup cooked black beans
- 1 cup cherry tomatoes chopped
- 1 cup corn kernels cooked
- 1/3 cup cilantro chopped, or more to taste
- 2 tsp. jalapeño minced, or more to taste
- 1/3 cup red onion finely chopped
- 1 Tbsp. black cumin seeds optional
- 1 Tbsp. scallions chopped, for garnish
Dressing
- 3-4 Tbsp. organic olive oil
- Juice of 1 or 2 lemons or limes if preferred
- Salt to taste
- Pepper to taste
Instructions

Cook quinoa per package directions. Chop salad ingredients, leaving avocado until last to prevent browning.

For corn, in sauté pan, heat avocado oil, add minced jalapeño and sauté several minutes.

Add corn and sauté 5-10 minutes, stirring occasionally. Set aside.

In small bowl, whisk together dressing ingredients.

In serving bowl, combine quinoa and salad. Drizzle over dressing and toss to coat evenly.

Garnish with scallion when serving.
