Quinoa Breakfast Bowl with Apples & Toasted Coconut

No one will argue that oats aren’t versatile. But they do, sometimes, get…old. Break out of a boring breakfast rut by filling your bowl with another wholesome grain that’s just as hearty and nutritious but a welcomed switch-up in texture and taste. Red quinoa – a protein powerhouse – becomes chewy and slightly sweet when simmered with chunks of fresh apple. Swirl in raw honey and sprinkle with coconut chips for a morning meal that could arguably pass as dessert.

Red Quinoa and Apple Breakfast Recipe

Quinoa Breakfast Bowl with Apples & Toasted Coconut

Serves 4

Ingredients

1 cup red quinoa
2 cups water
2 medium apples, peeled, cored and chopped
Pinch pink salt
1 Tbsp. raw honey
2 Tbsp. (per bowl) toasted coconut chips

Directions

  1. Measure quinoa and rinse well in a fine mesh strainer.
  2. In cooking pot, combine quinoa with 2 cups water. Add in chopped apple and salt and bring to a boil.
  3. Reduce heat to a simmer, cover and cook quinoa and apples for about 15 minutes; drizzle mixture with honey.
  4. Serve warm (or cold) with toasted coconut chips on top.
